SKINNY SALAD WITH A TWIST

Sometimes your salad needs a little, well, substinance, am I right? Sometimes lettuce and veggies just ain't cuttin' it! This is a salad that will keep you on track but also make you feel like you've eaten a full meal, and not just an appetizer.

INGREDIENTS

3 - 4 oz. Chicken Breast

2 cups romaine or mixed greens

5-6 grape tomatoes, halved

1/2 cucumber, diced

1/4 red pepper, diced

1/4 cup red onion, diced or sliced

1/4 avocado, sliced

4 oz. baked sweet potato fries

 

DIRECTIONS

For sweet potato fries, please see my recipe here. I usually make a whole batch at the begining of the week and keep them for lunches and dinners throughout the week.

Add all ingredients to bowl (make it pretty, its more fun!) drizzle with olive oil and lemon or your dressing of choice.

**I challenge you to ditch store bought dressings and start making your own. I am at the point where I rarely need more than olive oil and lemon, salt and pepper, but I will be posting some healthy salad dressing alternatives to get you off the supermarket dressing bandwagon. I promise you, once you switch, you will never go back! Especially after you start reading the labels!!
